Ducks

Our ducks are an Aylesbury Peking cross. This gives us a bigger bird with less fat. We rear them from one day old in heated, straw filled barns. At 4-5 weeks they are transferred to open barns and covered yards. As with all our birds, we feed them on our own special blend of home grown feed which is GM and additive free.

Our ducks are usually processed at 57 days, but at Christmas we bring them on longer to get a bigger bird. With duck, the flavour is in the skin, so we pluck them using a hand finished, dry wax process and hang them, guts in, for 3-4 days. Our ducks can be purchased whole 1.8kgs (4lbs) to 3.2kgs (7lbs) in weight or in portions.
