Geese
These are our favourite birds, but geese do take a considerable amount of raising. The birds grow in their own sweet time and take a long time to reach their finished weight. We take the goslings at 1 day old, in June and after 4-5 weeks inside in the warmth, we turn them out to pasture, where they stay for the next 22-24 weeks. Fed on our own mix of food the birds wander freely and crop grass. As you can see from the photograph, the birds have a lovely view.
The free range geese are processed in mid December. We hang them for seven days to bring on the flavour, before they are ready for our customers. When ready, our geese weigh about 3.6kgs (8lbs) and upwards. As with turkeys demand for geese is high so we recommend ordering before purchase. You can order at one of our farmers market stalls, phone, fax or by email.
